台灣新一代巧克力大師今天出爐，南投18度C巧克力工房主廚蔡佳鋒以鮭魚迴游作品勝出，將代表台灣與亞太好手較勁，爭取巴黎世界巧克力大師賽最後一張門票。兩年一度的世界巧克力大師賽（World ChocolateMasters Competition）台灣選手代表資格賽今天在台北市政府天母職訓中心舉辦，蔡佳峰打敗其他9名強敵奪冠，亞軍為高雄義大天悅飯店西點副主廚林政陞，季軍由台北寒舍愛美酒店副主廚鄭吉賢獲得。蔡佳鋒將以台灣巧克力大師頭銜，在明年3月台北國際烘焙暨設備展中，與亞太各路強手，爭取明年10月在法國巴黎舉辦的世界巧克力大師爭霸賽參賽資格。擔任18度C巧克力工坊行政總主廚的蔡佳鋒，今年在初賽以「鮭魚洄游」主題參賽，比喻追求可可的源頭，以巧克力製作「源頭」、「卵」、「洄游」和「黑潮」4項作品。其中模製夾心巧克力「卵」，蔡佳鋒巧妙選用覆盆苺顆粒果醬，再搭配以蜂蜜煙燻香味威士忌拌炒的台南東山鄉土窯煙燻桂圓乾，製作口感彈牙的「魚卵」，最後以聖多明尼克70%巧克力作殼，令人驚艷。主辦3屆的世界巧克力大師賽台灣區代表選拔賽的台北市糕餅商業同業公會理事長吳官德表示，結合大自然的靈感和大型工藝的競賽，考驗巧克力師傅的創意、想像力與技術，更能展現台灣巧克力工藝技術駕凌國際的決心與自信。(中央社)
